Pumpkin, with its vibrant color, rich flavour and many shapes and varieties, is not only a beloved ingredient in various dishes but also packs a punch when it comes to health benefits. From its abundance of nutrients to its potential positive impact on mental well-being, pumpkin is truly a versatile and nourishing addition to any meal.
Nutritionally, pumpkin is a powerhouse. It’s high in essential nutrients such as vitamin A, vitamin C, potassium, and fiber. Vitamin A, in particular, is essential for vision health, immune function, and skin health, making pumpkin a valuable addition to maintaining overall well-being.

Growing up in a tumultuous household, I often sought solace in my next-door neighbour Mandy’s kitchen. My fondest memory is of her making pumpkin scones; the whole experience provided a sanctuary from the chaos at home. Continuing the tradition over the years, baking pumpkin scones brings a certain nostalgia, comfort and a reminder of her care and compassion. These scones are more than a treat; they’re a reminder of the transformative power of food to nourish not just the body, but the spirit as well.
Vegan Pumpkin Scones
Ingredients:
- 1/2 cup sugar
- 3 1/2 cups plain flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup vegan butter or solid coconut oil
- 2 cups cooked pureed pumpkin
Instructions:
- Preheat your oven to 220°C (425°F). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder and baking soda.
- Cut in the vegan butter or solid coconut oil into the dry ingredients. Add the butter or oil gradually, mixing it in until the mixture resembles coarse crumbs.
- Add the cooked pureed pumpkin to the dry ingredients mixture. Mix well until all ingredients are fully combined.
- On a lightly floured surface, turn out the dough. Knead it a few times, shaping it into a large circle that is a few inches thick.
- Use a knife or a dough cutter to slice the dough circle into individual scones.
- Transfer the scones to the prepared baking sheet, leaving a little space between each one.
- Bake the scones in the preheated oven for 12 to 15 minutes, or until they are lightly golden brown and cooked through.
- Once baked, remove the scones from the oven and let them cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
- Serve the vegan pumpkin scones warm, with a nice cup of tea and enjoy!
